  • In the language of flowers, Gypsophila Paniculata symbolizes delicacy and grace.
  • The English name of this flower is ' baby's breath' which recalls the movement of the delicate flowers in the breath of the wind.
  • The etymological meaning of Gypsophila is 'lover of plaster '. The botanical name could derive from the type of soil most suitable for its cultivation: calcareous soil.

There are many varieties of the Gypsophila species, which show differences in size, foliage or flowering.

The most common are:

  • Aretioides which features white or pastel pink flowers that bloom in June.
  • Briquetiana which blooms in June with large, white or pale pink flowers tinged with purple.
  • Fastigiata Silverstar offers beautiful white, fragrant and star-shaped flowers between July and August
  • Muralis which features bright green leaves and pastel pink flowers
  • Dwarf with beautiful and delicate pink flowers that appear on very short stems, between May and June
  • Peaceful, blooming in the summer with white or pink flowers. The plant is the tallest, 90-120 cm.
  • Paniculata Bristol Fairy features slender stems, thin leaves and double white flowers that bloom in summer. This species is often used to make brides' bouquets or wedding flower arrangements.
  • Paniculata Fairy Perfect whose flowering is composed of double pink flowers in the shape of compact clouds
  • Repens Rosea plant of the Gypsophila family, perennial, dwarf, which produces small, soft pink starry flowers in late spring
  • Tenuifolia, a species that features needle-like foliage and white to pale pink flowers.

Baby's breath flowers are small, not much larger than a pencil eraser. But what size is missing, they are recomposed in volume. Baby's breath plants branch strongly in early midsummer, resulting in hundreds of flowers per plant. The stems are very thin, resulting in an airy effect in the garden on plants that can grow up to four feet tall. The less common creeping form of baby's breath forms an attractive bedspread in the flower garden, growing three to five inches tall. The bare foliage is narrow and greenish blue.
